I've decided to post today's training update on the 'Food + Drink' portion of the blog because that's most of what today's post is gonna be about! Today I completed my first double since my time at the University of Minnesota, and I know that if I'm going to want to keep up my mileage, then I'm going to need proper fuel. Look no further than Shalane Flanagan's and Elyse Kopecky's cookbook "Run Fast Eat Slow!" I first tried the superhero muffins after my younger sister expressed to me how great they are, and I've made them half a dozen times since. So, now that I've finally got a copy of the book myself (before I would have to ask my sister to send me pictures of the recipes from her copy!), I feel I've the freedom to try some of the other snazzy recipes!
After my morning run, I got right to work with the sweet potato purée that I prepped last night and got started on the sweet potato breakfast cookies (pg. 56 for those of you who have the book; also, I will refrain from sharing the recipe for copyright reasons). While mixing the wet ingredients, I had to read the recipe THREE times because I couldn't believe that there are no eggs in this recipe! (Of course, after looking a bit closer, there's a header on the page that reads 'gluten free-vegan-dairy free;' and I thought I was a good close reader…) After realizing this, I was so excited I nearly sent the mixing bowl toppling over the side of my kitchen cart! You mean to say I can eat this batter without feeling bad about it because it doesn't contain raw eggs? The recipe is supposed to yield 13 cookies, but my mixture only produced 12 because I couldn't help myself from eating a cookie's worth of batter while forming the rest of the cookies. Whoops! I can say that these are definitely a winner. Super simple and a great source of energy before heading out the door for a run; I had two before my second run today and felt great! Super glad that I have leftover cookies to fuel my runs for the next few days! Though it's not quite the end of the day, I'm happy to provide an update on the fundraising challenge for Worthy Mentoring. Currently, y'all have pledged $2.84 per mile that I run, and I've run 52 miles in the last four days. That brings the projected total to $147.68! This is great momentum, and I need your help to keep it going! Please consider pledging a penny, nickel, or dime per mile that I run for the month of December! You can do so here.
